Popular after-work venue under new ownership; looking to add private parties for celebrations

Combining a sense of sophistication with light-hearted fun, Bubbles Wine Bar in downtown Morgan Hill has grown over the past few years into a place to relax with friends after a long day. Many locals drop in to enjoy a glass of vino before walking across the street to enjoy the downtown amphitheater’s Friday Night Music series in summer or go to the Community Playhouse for a South Valley Civic Theater stage play or stand-up comedy performance.
The mischievously-named wine bar was conceived by Rich and Rosy Bergin, owners of the perennially popular Rosy’s at the Beach restaurant, also in downtown. Recently Bubbles moved into the proprietorship of David and Kerry Dindak, local residents who saw an opportunity to run a local business that introduces wine lovers to the best vintages produced in the South Valley and throughout California.
“This is a really cool spot,” David Dindak said. “Many of the wineries close at five o’clock, but we’re open for people who want to sample local wines. So if someone is interested in a John Avers or a Jason-Stephens wine, they know they can come here for wine-tasting in the evening. And then there’s some wineries that don’t have a tasting room or their tasting room is only open once a month. So we hope to be able to promote them as well.”
More than a decade ago, the building Bubbles is located in served as a local bank branch.
The original bank vault, with its intricate mechanical-locking door, provides a delightful place to store its stock of wines. And customers love stepping into the vault and viewing the bottles carefully arranged on shelves where safe deposit boxes use to exist.
Bubbles is more than a wine bar. Its serves a good variety of appetizer fare as well. The cuisine is served on small plates for sharing, and can make a light meal when combined with a salad.
Coming in for a special wine-pairing experience, Bubbles customers enjoy tastefully arranged plates of artisan and imported cheeses and cured meats, fresh and smoked seafood, and farm-fresh fruit including strawberries from Chiala Farms. They can top their wine-and-dine experience with scrumptious desserts served with French-pressed coffee or espresso.
Among the Bubbles menu’s newest offerings is artisan flatbreads made by the family-owned California Lavash bakery in Gilroy. Dindak particularly raves about the caramelized leek blue cheese and pear flat-bread recently added to the menu.
“We want to serve local foods as much as we can,” he said. “I just met with Mr. Mariani over at Andy’s Orchard the other day and we’re going to be serving the chocolate-covered apricots. Nobody in town does that.”
As the new owners, the Dindaks have plans to start promoting Bubbles as a venue for private events such as anniversary and engagement parties, birthdays, and other celebrations. People who discover Bubbles find its friendly and fun ambiance the perfect place for these special occasions to celebrate life with family and friends. And many join the bar’s free wine club to take advantage of other Bubbles benefits such as monthly tastings.
“It’s a quiet, nice place to relax,” Dindak said. “I get a lot of people who come into Bubbles while they’re waiting for their reservations at another restaurant. I think it’s a perfect location for a perfect little business.”
